deer damage

We are losing a lot of trees to what must be deer, because nothing else that we can think of can reach 4ft.+.

They are skinning off bark and eating the small branches, and have eaten the main trunks off several young fruit trees.

Is there anything we can do to discourage them? And what can we do to save the trees that have lost their bark? Is there a paint or coating or cover for this?
