Plants leaves wilt, dry, & die Please help

My vegetables sprout, get first leaves, have a healthy stem. Then the leaves wilt, dry out and the plant dies. We are giving plenty of water. I pulled a green bean up and it had a healthy plump stem and nice root system and yet the top wilted and dry up. There are no bugs on them. Please help. We are at our wits end. I have had gardens before and never encountered tho issue. We live in Goodyear, Arizona. I have pictures but do not see how to post them. Blessings & Thanks

possibly your over watering them? in Az we do it more often because of the heat.

It sounds like damping off. Open this link and click on the top right photo. http://www.ppdl.purdue.edu/ppdl/weeklypics/2-22-10.html This seems to be a common problem and there's a lot of info about how to prevent it. It's happened to me and I know it's discouraging.
