What do I do with all these tomatoes???

A few weeks ago, I went to pull out all my tomato plants to get ready for fall planting. (I have them in big containers.) To my surprise, they had EXPLODED in size (like, tripled) and one of the big ones easily has 5 dozen tomatoes on it. So I left them alone since it was still warm out, thinking they'd ripen soon and I'd be done. They still have not ripened.

I don't necessarily need the space yet, so they can stay put, but how long do I wait for them to ripen? Don't they need warmer air to turn? Now that it's really cooled off, are the plants just going to die with green tomatoes on them? I need a plan b/c next week we are leaving town for a week and I don't want to come back to dead plants or ripe tomatoes that were all eaten by the birds!

I've kept tomatoes over winter and they do ripen but it can take weeks, months. The ones I grew had a different taste when they did ripen, kind of like tomato paste. Bigger kinds can get kind of tough veins inside too. It is temp related I think.
