You can try, but I don't think it will work. I think what you will end up with are a lot of ugly, truncated culms with little foliage. What you need is to plant bamboo which have the leafing characteristic you want.

New culms appear to come out of ground with predetermined structure. Have seen no signs of an ability to sprout new branches where none were going to be already. Plant is not a true shrub, with dormant buds on branches.
