Will culling shoots increase growth of remaining shoots?

I have a large stand of running bamboo 10-15 years old now. Total area perhaps 50'x100'. I'm not sure of the variety.

I'm going to cut and cook shoots coming up outside the patch. I've heard different heights for when to cut them for eating. I'm planning on cutting them when they reach 8-12". Does this sound right?

I'm also thinking of culling the shoots coming up in the main patch. There can be as many as a dozen shoots coming up in clumps a small area. If I cut some of these shoots will that increase the growth of the remaining shoots? Or might it hurt their growth?
