The Dendrocalamus have big leaves; they're clumping and take full sun, but not sure how well they'd do in zone 8. Can you grow Bambusa in your zone? They're similar to Bambusa in requirements.
Some of these species are giants tho! I've seen them in their native Asian regions and they were awesome to behold. If I recall correctly, the leaves of Dendrocalamus latiflorus are used to wrap and cook rice in Chinese cooking. The leave size rivals that of the Indocalamus.

Dendrocalamus species would not do well in zone 8. I have a few in my Zone 9 Jacksonville location and they have died back every year out in the open. Another grower in Jacksonville has a few that do nicely, but he is right on the river, so his lows never get to what I get.

What about Pseudosasa japonica (Arrow bamboo). Relatively large leaves and though a spreader--it is not nearly as wild as Pseudostachys species.

Bambusa oldhamii has quite large leaves, but may be too large for you.

Here it grows over 40 feet tall, but very erect with nice dark green large leaves.

Thank you all for all suggestions. I think I will try Arrow bamboo. B. oldhamii is a little too big for my space.

I'm in Zone 8, too, and I have found Arrow to be a pretty agressive runner. However, the rhizomes are not as heavy-duty as the typical Phyllostachys so it's easier to rhizome prune.
