Will more succulent bamboo clippings rot?

It's Spring time, and bamboo is shooting up all over my yard. My mother asked me to cut some down for her because she wants to use it for crafting. The new shoots, however are very succulent. Will they harden as they dry, or will they just rot? If they just rot, then I'll know to cut the woody bamboo for my mother and save the shoots for eating.

For crafting, you need older culms from previous years, preferably 3 or more years old.

New shoots will shrivel and rot easily.
