You might want to buy bamboo shoots at an Asian market rather than try to grow your own. One plant is likely to provide about enough shoots for one meal annually...

Yes, that could work. I was just suggesting that, unless you have access to free bamboo, you may find the cost of multiple bamboo plants big enough to produce adequate size shoots may be quite a bit more than you want to pay.
