Most bamboos do not root from stem cuttings, only some tropical ones.

You've heard way too many tall tales about the invasiveness of bamboo. If it were that easy to propagate, we wouldn't be paying the huge prices per pot that we do. Go ahead and stick them in the ground: they're dead and they can't hurt you anymore...

My bamboo stakes started throwing shoots and I’m observing to see if they actually root because if they do, I’m getting rid of them. I have enough bamboo and don’t wanna get bamboozled into anymore. Granted I live in a legit jungle and I have one of the tropical varieties afore mentioned.

No, Bamboo is grass, and grass does not sprout from broken stems. Many Bamboos, in fact, require a good clump of roots to grow away from the mother plant.

You can propagate some clumping bamboo from stems/culms, but it takes more than putting a stick in the ground to get a viable plant.
