soft fresh bamboo shoots

We have just bought a bag of fresh bamboo shoots from a local grocery store in Toronto with intent to experiment in growing it. Has anyone tried it before? Any ideas whether to plant it vertically, horizontally or leave it in water to try to root it? Bamboo plants are so hard to find here or they are so prohibitively expensive that we look for alternative methods.
