New to bananas

We live in southwest Florida right on the gulf, and we planted some tropical fruit trees and 2 bananas. One is a goldfinger, and I don't recall the name of the second, but it was bought at a local nursery and is supposed to thrive and produce well in our area. These have been in the ground for about a year and a half now, and both have a bunch of bananas on them now that seem to be doing well. They both have also reproduced several other stalks which are now getting to be quite good sized. My questions are, how long until the fruit will be ready, and do I need to remove any of the new plants which are springing up from the roots? I do know that the main stalk dies after fruiting, and is replaced by one of the new ones, but do I need to limit them to just 1 or 2 new stalks in order to get a bloom next yer, or is it ok to let the plant go naturally? We have an irrigation system, so the get plenty of water, and I fertilise every 2 weeks. Any advice will be appreciated.
