When do I harvest?

My 3 yr. old tree(in NJ) is finally producing. About a bunch a day is being uncovered. How do I know the right time to cut the stem down? Where would be a good place to hang the stem for the ripening process?

Hope for a late winter cause it takes a long time for the fruit to mature. You're only hope is to keep track of the first frost warnings and cut the bunch off before the frost, then bring in it the house to hopefully ripen. Either that or build a green house around the plant and let them ripen on the plant.
