To Cut or not To Cut

The question is: after bananas stop forming on the inflorescense do you cut the end off or not, or does it make a difference? And, when the bananas are harvested does it matter if they are ripened in a hot garage or in a ~cool house?

If you cut it make sure it is far enough down so it wont affect the fruit, it doesn't seem to make a difference.
I do mine in the garage and it ripens nicely.
