How large are the plants you are trying to overwinter? Cutting the plants down to soil level is generally not a good idea and they will likely die if they are not kept in cold storage. You do not need light to overwinter banana plants. I keep my plants in a cool room in my basement for several months during the winter with no light and overwinter great.
