Yes, it should work. Last winter, I overwintered a pot of super dwarf cavendish bananas under my house. No water and no light. I let the soil dry up a bit before putting them in storage and cut off all the leaves except for the unfurled ones. Keeping them dry is key. Also, try to keep them dark as possible. Throw a heavy blanket over them if you can't keep out the light.
