Getting the banana to fruit

I live in Houston, and have a Manzano that I've been trying for 2 years to get it to fruit before it gets zapped by the occasional frost we get.

This year there were two stalks of fruit that got zapped by the snow we got in early December.

I have a plan, and would like an opinion on it.

I plan to fertilize it in the spring with an all-purpose fertilizer (13-13-13) to get the leaves grwoing.

Once that is done, I was planning on applying potassium to try to get it to fruit earlier. I thought about grinding up some bananas and peels and pouring that around the tree.

If there are any other options, such as commercial potassium fertilizer, or other fertilizer that would be better, I'd be glad to hear about it.
