You can trim all the leaves off and wrap the p-stem. Cut it to the ground as well. Leaving it where it left off gives the plant a size advantage,instead of forcing all it's energy into growing all over again from the ground.

I leave it alone and let it do its thing. After the threat of frost is over (usually in March for me) you can clean up the dead leaves by cutting them off. The banana should put up new leaves from the stalk as long as it wasn't frozen. I compost the old leaves.
