Maybe she was talking about the Linden Tree. It makes great honey. Google Linden tree Honey and see if it sounds like what you had.

That might be it, but she said it was spelled "LINN." I guess the name could've gotten shortened. Names and words tend to do that in mountain farming regions. =)

I looked at LINN tree on the web and it is a linden.

In many parts of northern Europe, it's also known as a Lime tree.
In appalachia, it's more commonly known as the Basswood tree (a soft, light coloured wood). The bees work the blooms and it does produce a very light coloured honey with a slight creamy-yellowish cast (not to mention tastes great!).
