I can't be a whole lot of help, but I recall that when our local beekeepers had an extraction session, where we rented an extractor and everybody brought their frames to have the honey extracted, they made sure to put the honey jars in the oven first to dry them out completely. Apparently, any water in the jar would promote crystalization.

water in the jar promotes wet honey which will ferment and spoil. It does not promote crystalization.

Honey naturally crystalizes, particularly if it's never been heated, but it depends on the nectar source.

You can try to dry honey in a dehydrator, then grind up the remains.

Thanks, ccrb1. I was just repeating what the beekeepers told me who were doing the extracting. Good to know that water will promote spoilage. I'll be sure to keep my containers dry.

If anyone has experience with organic chemistry, they will know that crystalization is often promoted by the introduction of a nucleating agent. There's a story that chemists tell about the oldtime chemists keeping a little dust or sand in their pockets to add to a superconcentated solution that refused to crystalize. I have personally seen how tiny imperfections in a glass beaker will be enough to form a nucleating center. With these facts in mind, I wonder whether honey would act the same. Rather than introduce sand or dust, how about grains of sugar. Perhaps their cubic shape would be enough to start the crystalization of the honey. An interesting experiment might be to try introducing crystals of different shapes and sizes. Ascorbic acid crystals, maybe a few grains of salt. I could see this as an interesting science experiment for a child's class project.
