Favorite Heirloom/Self Sufficiency Gardening Books?

I'm planning a Book Review section for my site "The Heirloom Orchardist." My readers are not just interested in heirloom fruit varieties and fruit culture, but also 18th and 19th century rural life, self sufficiency, sustainabilty, and organic gardening/farming methods.

All of these are big topics, and there are a lot of books out there. So I thought that if anyone has suggestions, particularly good books that you've enjoyed, let me know. I'll read them, and start writing reviews on those. Thanks much!
