Is the part of broccoli and cauliflower that we in the US usually eat the "capitulum"?
The term "capitulum" applies only to members of the Compositae or Sunflower Family. Broccoli and cauliflower are members of the Cruciferae or Brassiaceae and what are being eaten is a corymb type of racemose inflorescenes.
