When I at the university we had a course in 'vegetative taxonomy'

When I at the university back in the early 1960s we had a course in "'vegetative taxonomy' of ornamental plants".

There was an illustrated manual with different sorts of growth e.g. upright tree or bushy, and different sorts of leaves e.g. singular or leaflets on a stem etc. and we could come up with a fairly good guess as to what the plant might be.

A fast and dirty search of Google for ~ "vegetative taxonomy" and plants or horticulture ~ produced nothing.

What would I search for to find a similar manual today?

Do a search for "plant silhouettes". You should find what you are looking for on those pages. Your post brought back some old memories as this is how my Dad first taught me plant names, by silhouette shape, when I was very young. I found it to be a helpful tool in the landscape design business.
