What function(s) do ''essential oils'' serve in the plant?

All our lives we have heard of "essential oils" which have, or claimed to have, a large number of uses. What function(s) do ""essential oils"" serve in the plant?

In vegetative tissue they usually serve a defensive function. In flowers they serve to attract pollinators.
