I'm not an expert but I thought I'd share with you what I've noticed with my echeverias (which I LOVE LOVE LOVE!! Lol) Mine are in the gritty mix. And when I water them the rosette leaves pull up and when their mix is drying they lay flatter. And you might want to post a pic of them so they can see how they look now and give you better advise. :) (and if you have an older pic of what they looked like b4 that would probably be EVEN BETTER) good luck!

That sounds to me like not enough light; the rosettes respond to strong light by closing up, and to less light by opening up. A strong lack of light will cause leaves to droop and the rosette to grow taller. Long term, the plant won't survive such a lack of light, but temporarily they can survive (although it will affect the plant's appearance for a while). Hopefully this is an easy fix for you, if you have a place with more light you can move the plants to. I know for me it's tricky in winter since I only have one south-facing window (generally the only direction that will provide enough light for succulents). I now have too many plants for my south-facing window, so I am going to put some in a north-facing window with a grow light system.

Can't say for sure with the bottom two photos, but they all look like they're opening for the growing season. They begin to grow now, and basically do very little in their balled up fashion during the late spring and summer. If you're not overwatering -- I wouldn't worry and just hit them with some fertilizer at your next watering.
