Echeveria agavoides question

Well, the tag says Echeveria agavoides. I have never grown this plant so I have a couple of questions.

The leaves are not rigid, but more rubbery. I have it in a gritty mix in full sun. It looks like it is doing well to me, but I wondered about the leaves. I see no signs of rot or pests or disease.

Second - is this how the plant pups, or are those shoots an inflorescence going up? I removed 2 and potted them up. They are doing fine as well.
