Jeff has it times 2. They are best grown with lots of good sun light to develop"bleach out" some color. They can be grown indoors but, again, without lots of good light will change appearance. Like other succulents, they are somewhat drought tolerant, will grow in almost any good draining mix and don't require too much food or attention. With time the stalk elongates, gets top heavy and will require beheading!

Oh, most of the color on the lower leaves is: A)from the intense sun exposure and B) they are old and will soon die back.

My home is in SoCal low desert, plenty of sun all year round but very dry most of the year. Super hot in the summer over 100F, even winter around 70s during the day. Think the climate will work?

Oh, no. Low CA desert: not full sun in summer! They are not cacti. In habitat Echeveria grow mostly in long grass or on shaded cliffs/slopes or in dappled shade. Right along the coast they are fine in full sun, but even 10 miles inland, morning sun/afternoon shade is about as much as they like. Winter in the desert probably morning sun/afternoon shade is ideal.

I purchased two in 3g pot and three in 1g pot. I would like to repot them and combine into 2 large pots. Do they like their roots disturbed?

What type of soil/mix would be ideal?

What about water in super hot/dry desert? I am thinking of putting them on every otherday water.
