Poinsettia flower structures?

Here is a photo of my poinsettia that I bought two Christmasses ago, and it rebloomed nicely this winter. I took a photo of the weird flower structures that appeared as the flowers aged. What kind of stuff is going on with this? Green things grew out of the middle! It looked really weird to me. I kind of liked the plant with red flowers and varigated leaves, but the flower parts were strange.
