Saved The Tomatoes

Remember I complained that my tomatoes were getting ripe but had no flavor to them. They still don't, by themseles, but I remembered we use to make Tomato Marmalade. There are about a jillion recipes in a google search, but none that had that extra kick that I enjoyed so much. Well, thru trial & error I finally got it all sorted out and now the tasteless tomatoes are getting a taste uplift and it's so good.

Scald, removed tomato skins and chop coarsely.

Let tomatoes sit in bowl for overnight in fridge, then drain off excess water.

TOMATO MARMALADE)

4 cups of chopped tomatoes

3 cups of sugar

6 Tbsp.of finely chopped candied ginger

2 tbsp. ground cinnamon

2 whole lemons..slice as thin as you can then cut the sliced in quarters

Bring to a boil, then let it simmer, stirring frequently so as not to burn till the mixture reaches 225 deg. on candy thermometer. Pour into sterlized jars, seal & process or I put my jars in freezer.

I use this marmalade over toast, as a dip and it's delicious over vanilla ice cream.

You can use this basic recipe for all sorts of fruit and sweet green/red peppers.
