| What's your favorite tomato for sauce? I'm ordering seeds, but have never really done sauce tomatoes before. |

| Amish Paste Costoluto Genovese (my favorite) San Marzano Redorta Martino's Roma Opalka Rocky #5070 Viva Italia Be careful about tomatoes called simply "Roma" or "San Marzano". There's lots of stuff out there that isn't exactly what you think it is. Joe |

| I use any tomato that is ripe for sauce. The non-paste ones just take longer to cook down, but the sauce is just as delicious. Of the paste ones I like Costoluto Genovese and San Marzano Redorta too. Amish Paste and Opalka are delicious but yield has never been good in this garden. |
