Opinions please on trees

I have 3 options that my landscape designer has selected for my front yard- which basically is due west and all options are great, but am torn between 2. I asked her what she would do- but she doesn't want to tell me as it's my house- she says she loves them all :)

Option 1:

Tree base either After Dark Peppermint or Vesuvius Plum with Phormium atropurpureum. Has accents of lime, yellow, black. Has hebe, aeonium as well.

Option 2:

Olive and the phormium as well with secondary of romemary, lavendar, mexican sage bush. Also has the hebe, aeonium

I love both, but need to come up with the tree option first before we can go from there, and we are going together to select trees next week.

I really love dark color of Option 1- but there are issues:

Will the Vesuvius become a crispy critter in the front. How long do the leaves stay off in the winter. I will have 2 trees in front so it might be bare.

The Ag Flexuosa- they seem to get really big? Is it hard to manage the growth?

Which tree- Peppermint or Plum would you choose?

Any takers for the Olive trees (2)?

Which tree is the easiest to maintain long term?
