I would suggest you pass your question past Dave Wilson Nursery, since it's more than just finding good low-chill varieties, but also perhaps? a variety suitable for cider making? I can tell you for my area, there are a few great choices that are good low chill apples for eating: Anna, Dorsett Golden, Bevery Hills, Pink Lady, Fuji and even Read Fuji. But, as far as a good variety for cider making, not sure. DWN may be able to give you some good choices, though. Also, you may want to pose your question over on the Fruit & Orchards forum on Garden Web. Many, many knowledgeable orchardists on that forum :-)

I planted this low-chill Dorsett Golden during the spring of 2010. It produced fruit this summer and I just took the photos below. It requires only 250 chill hours. For this tree a pollinizer is not needed, however, I read that it is an excellent choice to pollinate with the Anna. It is a nice and crisp good eating apple and they say it is good in apple pie. Harvest for me has been June-August.

For cider in low-chill So. Calif, Stump is hard to beat; very spicy, very prolific, very reliable. The only drawback is that it ripens a bit early, in September during our late heat wave when people are thinking more of ice tea than mulled cider. Cinnamon Spice ripens about the same time and is a good pollinator, but isn't as spicy. Later in the fall some robust varieties like Red Boskoop and Sierra Beauty will give more of a bite and are also quite reliable. Dixie Red Delight and GoldRush will finish the season out, with Lady Williams hanging on until February. All these are suited for your climate and do well on 250 chilling hours.
