Pat Welsh and Robert Smaus are the two best references for Southern California gardens, IMHO.

Fuchsias can be cut back in November in coastal zones only, acc to Welsh. Other southern Californians have to wait until Feb. You can also cut them back again lightly in August for more bloom.

Camellias and gardenias do not require pruning. You can trim camellias back lightly after bloom. Not sure about gardenias- I have never known one that grew large enough to need a pruning.

Azaleas should be pruned when they are done blooming in May. They can be sheared back.

Roses can be pruned in the winter or in the spring or whenever it's not too hot. People have very strong opinions on this. Some people do not prune at all, some cut everything back to a few inches of cane once a year in January. There are some roses that will die if they are pruned hard, and others that do well. If you know what kinds of roses you have, you will get better advice.

I'm in the same climate zone, although a little further from the ocean. My camellias get very dense so I do prune them to thin them out and keep them to the size I want. The best time is at the end of bloom, just as they start new growth (so I can see where the new growth is). I have pruned them at other times and it hasn't seemed to hurt them. I actually pruned one a few weeks ago.

My roses are pruned just as new growth starts, usually late December or early January. If I prune too early the new growth gets fungus (rust).
