Usually it's a Sport. That's when a plant puts out a limb that has blooms that are unlike the original plant. And then sometimes it is caused when someone has grafted a different limb on to the plant. Look and see if all the whites are coming from the same limb.

It may be that it's a variety that does that naturally, I just don't know that much about camellias.
