Sweet Potatoes...when to start

HI
I live in Central Ontario and would like to grow sweet potatoes this year. I have already purchased two organic potatoes but have question....when should I start putting them in water to try and grow slips? It is January 4th 2013 and I usually have to wait until after the May 2 4 weekend to plant. Can you let me know? I don't want to start them too early and then have them die.

I have just started mine. I tried starting them about 25 years ago but didn't start til March and that was to late. I asked on the Far North forum and got some good advice, you can do a search for 'marric'.
