Bare root perennials

Does anyone have any advice on starting the bare root perennials that start to come out in the stores at this time of the year. They look like a good deal when you look at the price, but I can't plant them out for weeks yet. My last frost date is usually around the first week of June and I don't like to leave them in the bags too long after buying them, but they are grown out too much by the time I can plant them out. I have a greenhouse and was thinking about potting some up and sinking the pots into the beds in the greenhouse until I can get them moved outside. The only thing that I can forsee as a problem is the temperature fluctuations. Daytime can get up to about 25c and night time can get down to -5c. Would this present a problem to bare root perennials potted and sunk into the beds in the greenhouse? Any other suggestions?
