Alder and willow regrowth

Hello! I hope you can help me. My husband and I bought a small farm in the Brockville On area. The land is very wet, and has been fallow for 50 years. (We are re-digging the old drainage channels) There is a great deal of willow brush growing in the wet spots. It's too twisty and crooked in growth to be of use for twig furniture. I was wondering if anyone knows if it will grow straight, tall shoots if I cut it back? I want to do the same to a group of alders. Does anyone know how long it takes for new shoots to be ready for harvesting? I see potential all around me, but it's sort of frustrating in its current natural state, lol. Thanks, Mal H.
