I would suggest that different growing conditions are the root cause. Do the plants get considerably more sun than previously? Sunlight will fade blooms over time.

IIRC from geography/geology Arkansas has a more acidic soil than Texas. I could be mis-remembering though. :>) Soil PH does affect the color of hydrangea, it may affect the color of canna too. Something to consider.
