what to do in winter

I have a question I'm hoping somebody can help me on...I planted a few canna musifolia and they grew to about 10 feet tall. They turned out really nice. Now winter is coming and I'm not sure what I should do with them. I live in New Jersey (the Cherry Hill area, south Jersey), but I 'm not sure what zone I'm in. I've heard I can just mulch the area really well and that they should survive. I want to do that but I'm not sure, do I need to cut the stalks down for the winter and then mulch heavily? If so, how far down should I cut for the best results? Should I add any fertilizer or any food in the spring, and if so specifically what? Any info anybody can shed on this would be great. Thank you!
