Canna roots are edible.

Has anyone eaten any?

Are they good?

How would you prepare and cook them? I would suppose you would boil them, but how long. peal them?? what do you think.

I don't like the way cannas, look, so am trying to find some use for them. They are your garden variety red, about 4 feet tall, so nothing special, that anyone would want, probably.

Uhhh... WHO says canna is edible? The ones I have smell kind of funky when I'm separating them in the Spring and by that I would judge they taste about the same no matter how they are prepared.

The "garden variety" red canna that I grow (The President) range between 4 and 6.5' depending on the amount of sun in the area they grow. They bloom constantly all Summer and I don't have any problem giving away xtra cannas each Spring. I have standing orders from about 8 folks for all I'll give 'em. Try handing some off.

BTW, let us know how they are compared to a turnip! Eeeeeuuuuwww!

Canna bulbs are definately edible... i just found out by boiling a few up with some garlic and a little honey for sweetness. asside from the numbness in my legs just kidding, they really taste just like potatoes. you could pass them off if prepared correctly as potatoes in a stew. I would reccomend removing the skin, washing thoroughly, and cutting in bite size pieces before placing in a boiling pot of water, boil for about 5 mins or untill soft enough to poke with a fork. alittle salt and pepper and voila...

This sounds like a topic to dump into the Harvest Forum.

3 months from now there'll be all kinds of threads like ...

"What Canning Machine should I use on my Canna Tubers?"

"Can Deep Fried Canna Tubers be Frozen?"

"I muffed up my Canna Jam by adding Sugar too soon!"

"How can I pickle Canna Tubers?"

"What goes good with my Tropical Pink Canna Tubers?"

My friends had some visitors from Indonesia. They were quite interested in seeing the cannas grow up here (where we have to take them indoors in the winter).
Apparently, not only the roots are edible, but the flowers as well. I don't know if different varieties of canna fall into different 'edible' categories (i.e. are they tasty? nutritious?) but I'm not quite willing to start chewing on mine :)

You can use the rhizomes like potatoes.
Served with butter, salt and pepper, and a shot of Beano they are decent.

Young tender leaves can be used for wraps.
Young shoots can be used in stir fries.

In many parts of the world cannas are used for flour and noodles. Glass noodles are made from canna.

Actually, there are likely many products on the Supermarket shelves which use Canna Starch or other parts, especially, in the international/ethnic foods aisle.

We've likely all eaten Canna before where its starch is used as an additive in food products, but just don't know it. Wikipedia lists that the seeds have been used as an addition to tortillas, but I don't recall every obtaining tortillas with seeds in them. Perhaps, the seeds are crushed into a flour when used in tortillas.
