well i dont think that flowering will help your plants very much, as even during the growing period some poeple cut off the flower stalks before they flower so the plant will put more growth in to traps and leafs.
So at this time of year i would cut off all the flower stalks before they flower so as to not to weaken the plants as flowering to often can weaken them to the point of death especially at this time of year.

Agreed, if your plants aren't getting any sunlight or any type of light whatsoever, it's best to cut off those flower stalks, it will exhaust your plants and may kill them, specially right now since it's going to be winter.

if you're not seeking to get seed or anything, clip those flower stems off.

Just another voice suggesting to cut the flowers! Your approach to work with providing dormancy is a decent one. What I do is keep mine in the unheated, cold attic for ~4-5 months, right at a window. I let the natural decline and rise of photoperiod, along with the corresponding temps to keep it in dormancy and then provide the cues to awaken them. And when danger of frost passes, I take them outside, for maximum sun and growth. I live in the Buffalo, NY area, so keeping them oustide, year round, without mulching, is probably a death sentence! But you have the elements correct - reduced light, temps, and water. Do you have artificial lighting at all?

No artificial lighting, really -- they get SOME diffused light whenever I have the kitchen light on, but just from a typical bulb. There are also windows in the kitchen, but as I have the pots right against the wall on the floor this light never reaches them. I will begin to bring them back outside in early spring as you do, although I will have to be a bit more careful since there will be a greater temperature difference from my kitchen floor to outside compared to your cold attic to outside (I suspect anyway).
