HAVE: Cucumber salad recipe from Raleigh swap

| Cucumber Raita
2 medium cucumbers, peeled, seeded, and finely chopped
1 cup minced red onion
1/2 teaspoon minced green chili (optional)
2 tablespoons chopped cilantro
2 cups sour cream (or plain yogurt)
1/2 teaspoon ground cumin
1/8 teaspoon ground pepper
1 teaspoon salt
In a medium bowl combine all ingredients. Set aside for roughly 20 minutes. Taste for salt. Serve cool or at room temperature.

| Judy, I used sour cream and minced green and red chili. The yogurt is good if you want it to be low fat. Let me know how it turns out! |
