Limbing up citrus tree - good or bad?

There are some older established citrus trees in our area (citrus country) with the lower limbs cut off. The trees have a very attractive form and a canopy at the top.

We have a new Bearss Lime that I want to plant out and I would like to grow it in the same manner, removing the lower limbs as it grows.

Is this a good or bad idea? If good, do I start removing lower limbs while it is young, and continue each year until it is mature?
