Orange and lemon tree questions

Winter passed us by this year in southern AZ (again), and my three orange trees (Valencia, blood, navel) are still full of wonderful fruit, even after eating daily, giving bags of oranges to friends, and four batches of marmalade! All three have lots of buds already, with blossoms opening any day now. We have always picked all the fruit immediately when this occurs, thinking the trees need to concentrate all their energy on the new blossoms. Are we correct, or can we leave the fruit on the trees?

Also - just purchased a 3 to 4 foot tall potted lemon tree from Costco. It has several blooms. We'll be putting it in the ground this week, but wonder if discouraging fruit at this time is beneficial for the tree.
