Want to get some old citrus going good!

Hi all, I'm on a couple of acres in eastern Escondido, an old avocado grove. Most of the citrus trees died and were cut down years ago when water got too expensive, but we have three grapefruit trees and three orange / tangerine trees. None have received any particular care. I've banked them, cleared out weeds and crap from underneath them, and pulled dead fruit off of them. The grapefruit trees have yellow grapefruit, but they also have buds and/or small, growing green fruit. Should I pull off the yellow fruit? I'm trying to get all of them more water on a regular basis. What else can I do to help them along? These are all OLD trees, probably 30+ years. We also planted a lemon tree that's still new and small and spindly but has a bunch of lemons. Any hints or advice appreciated!
