Help needed with Valencia Orange trees-San Diego

Hi all,
This is my first post here. I'm in need of some serious help with my newly acquired Valencia orange tree grove. I recently bought a house with about 40 valencias. They are beautiful mature trees and are producing amazing fruit. The old homeowner really knew what she was doing. However, I do not know what I'm doing, yet. I need to learn very quickly. Where do I look for knowledge? Is there a good book that would cover caring for Valencia orange trees? A good website? Blog? The trees are all planted in the same area. They have a nice irrigation system. They get full sun. I need to know how often to water and for how long. Supposedly they're getting a drip. Do I need to use fertilizer? What kind and when? Anything else they need? Mulch, manure? When do I pick off all the fruit? When do Valencia's bloom? Only in late spring? There's so much I don't know. Where do I start learning other than by trial and error?
