Pomelo question - safe to eat?

new member here.

when we moved into our house 2 yrs ago, the previous owner had planted a pomelo tree. there's TONS of pomelo every year. the pomelo have a very thick skin, like about 0.5 - 0.7" thick!

here's our questions:
1) it's super juicy and super sour! how to make it sweet?
2) we noticed the seed inside the pomelo when cut open, the seeds are sprouted!! is it safe to eat?

we've asked the local nursery and they said to give it more water, which we did and it's super juicy.. just super sour!

please help~
