Fruit on old wood/new wood?

I hope one of the many citrus experts on this forum will catch this post. I have citrus in containers and want to control the top growth that is exploding right now. That being said, I also want the trees to bear plenty of fruit! Guess I just want it all!

Anyway, my question is, will pinching affect the fruiting? Does citrus bear on old wood or must it have the new growth to bear a good crop? I have a meyer improved lemon, a bearss lime, a valencia orange and a satsuma tangerine. All have been in 26" clay pots for about 3-4 years, are very healthy and have fruit on them now. Thanks!
