Meyer Lemons, When to Pick them?

Hi there!
We have 2 Meyer Lemon trees (more like bushes). One is in a large pot and one is planted in-ground outside (being in Va I have to enclose it in a mini-greenhouse in the winter, it's located on the south facing wall of our home).

Both are doing quite well and both are just 2 years old now. The one in the pot has 8 nice lemons on it and a few are yellow with a tint of light green on their shadow side. These seem to be taking forever to turn fully yellow but do they really need to fully yellow turn before picking? Would regret picking one to find it's unripe even though it's 90% yellow...but then again how would I know since they are supposed to be tart, ha.
