I know it's too late, and much too early, but I was wondering if plants that are too young to bloom need the dormant period in the winter or is it productive to keep them growing all winter long?

No, they don't need a dormant period and it is productive to keep them growing all winter. That way you get blooms earlier in the long run. I keep my immature clivias under grow lights and on heat mats to keep them going during the cold months.
