I cut them to the ground and let them come again. Once they've flowered I find very little on them is usable.

I hate having new baby chives all over the place, so I deadhead even before the blooms open if I get a chance.

I eat chive blossoms! They are delicious, especially on an omelet. Seriously, folks taste a fresh chive bloom!

Cameron you're right, the blossoms are delicious. I use mostly before the flowers form so don't get to eat too many of those. I have several different varieties and find that once they start flowering the leaves are a little on the tough side.

So since these are overgrown and about done, cut them I will. And next time they bloom I will eat the blossoms!

Oh yes, eat the blooms. They are wonderful garnish in salads, floating in soup, stuffed into omelets, etc. Yummo.

You can also use the blossoms to make compound butter.
